Grandma’s Zucchini Burgers

3 medium zucchini peeled and shredded
1 cup Italian-seasoned bread crumbs
1 cup shredded mixed Parmesan and Romano cheeses
1 large onion, shredded
1 large egg, lightly beaten
1 teaspoon each dried oregano, basil, garlic powder, red pepper flakes
1/2 teaspoon salt
1/4 teaspoon ground black pepper
A few tablespoons olive oil to pan fry

Peel zucchini. Grate zucchini and onion with a food processor. Put a clean, dry dish towel in a large strainer and put grated veggies in it to remove extra moisture. Press out liquid and let sit for 3-5 minutes.

In a medium bowl, combine grated, drained veggies and the rest of the ingredients (except frying oil). Shape mixture into 4-inch patties, pressing together firmly.

Heat large skillet with olive oil over medium heat until oil begins to ripple. Cook zucchini cakes 3 to 4 minutes per side or until evenly browned.

Serve on buns with cheese, lettuce, tomato, ketchup etc as you would your favorite burger.
